We find them anywhere from the surface down to 3,000 feet deep. Spring and early summer are peak season as they migrate north. Anglers dream of hooking a bluefin for the incredible strength and stamina they show in a fight. It's not uncommon for battles to last hours. The meat is prized worldwide, especially for sushi. To catch bluefin, we use heavy tackle and troll with spreader bars or daisy chains. My local trick is chunking with fresh butterfish - it drives the tuna wild. When you hook up, be ready for the longest, toughest fight of your life. These fish are true giants of the sea.

Cubera snapper are the kings of the reef, growing over 100 pounds. They hang around rocky areas and wrecks in 60-180 feet of water. These big boys are most active at night, coming out to hunt crabs and small fish. May through August is spawning time, when cuberas gather in huge schools. That's when we have our best shot at trophy fish. Anglers love cuberas for their bulldogging fights - they'll try to dive straight back to the rocks when hooked. The meat is excellent too, firm and sweet. To land a big cubera, we use heavy tackle and stout leaders. My secret weapon is a live blue runner for bait. Drop it down, let it swim, and hang on tight. When a cubera hits, it'll be the fight of your life.

I like using purple and black lures - they really seem to trigger strikes from big wahoo.
